Once it was tall-grass prairie.  In 1835, two newly arrived businessmen, Lewis Brinsmaid Judson and Levi F. Arnold, laid out the village of Oswego on land then still officially owned by the local Potowatomi, Ottawa, and Chippewa tribes.

Now the grass has been replaced by cornfields as far as the eye can see -- at least west of the Fox River -- with cornstalks taller than a man...   Mostly, it's the flat farmland of northern Illinois about 60 miles west of Chicago. In the cool and dry of September, the corn -- and beans -- are ready for harvest, and overhead is an azure sky with puffy cumulous clouds drifting lazily by.  But things are rapidly changing.

Even in Illinois, not everything is prairie-like.  In places, the terrain resembles California's wine country, with terraced vineyards sweeping down toward the banks of the scenic Fox River Valley. Vines, heavy with clumps of juicy purple grapes, cling to south-facing slopes...
